Steaks

Salt & Pepper Steak

 

When I want to grill a nice steak without having to use  my rub, I always turn to just plain salt and pepper.  Using salt and pepper alone tastes great on a steak.  It brings out that natural beef flavor. 

 

I never get complaints when I grill my steaks with salt and pepper alone.  It is a simple recipe and is easy to grill.  My favorite steak is the New York Strip.  It always has been and probably always will be.  My next favorite is the Ribeye.  You can use any steak you want, it does not matter.

 

There are only three ingredients you need.  That is fresh ground pepper, Kosher salt, and vegetable oil.  First pat dry your steaks.  Once that is done you can grind your fresh pepper on your steaks.  Then add about two pinches of Kosher salt on your steak.  Last, add about a tablespoon of vegetable oil on your steak.  Spread the vegetable oil all over the steak, salt, and pepper.  Do this to both sides of your steak. 

 

Also make sure to coat the sides of your steak as well.  I notice that a lot of people neglect to do this.  I especially like to get the mixture on the fat of the meat.  It gives it an awesome flavor! 

 

Once you fire is down and the coals are glowing, you can add your steaks to the grill.  As you already know

Ingredients:

  • Kosher Salt
  • Black Pepper (Fresh Ground)
  • Vegetable Oil

T-BONE STEAKS WITH PARMESAN-GRILLED VEGETABLES



35 minutes

2 beef T-Bone or Porterhouse steaks, cut 1" thick (2 lb)

1/4  cup grated Parmesan cheese

    2  Tbsp olive oil

    2  Tbsp red wine vinegar

    2  red or yellow bell peppers, quartered

    1  large red onion, sliced (1/2")

Seasoning:

    1  Tbsp minced garlic

    2  tsp dried basil

 

1. Combine seasoning ingredients and 1 tsp pepper.  Press 4 tsp onto beef steaks.  Add cheese, oil and vinegar to remaining seasoning; mix well.

Place steaks on grid over medium, ash-covered coals.  Place vegetables around steaks.  Grill steaks, uncovered, 14 to 16 minutes for medium rare to medium doneness, turning occasionally.  Grill bell peppers 12 to 15 minutes and onion 15 to 20 minutes or until tender, turning once.  Brush vegetables with cheese mixture during last 10 minutes.

Carve steaks; season with salt and pepper.  Serve with vegetables.

Carne Asada


25 minutes

 

2 boneless beef top loin (strip) steaks, cut 1” thick (1-1/4 lb)

2 tsp ground cumin


2 cloves garlic, minced


2 lime wedges

    Guacamole

 

1. Combine cumin and garlic; press onto beef steaks.  Place steaks on grid over medium, ash-covered coals. Grill, uncovered, 15 to 18 minutes for medium rare to medium doneness, turning occasionally.

Squeeze lime wedges over steaks. Carve steaks; season with salt. Serve with guacamole.
