Mesquite Grilled Hot Wings
Mesquite grilled hot wings will probably be the easiest recipe on this site. The chicken wings are so easy to gill and have a great flavor. I usually cook the wings
first as an
appetizer so I don't get so hungry while barbecuing the main dish. Chicken wings also make a great main dish too! The wings will have the hot kick of the hot sauce and will also have that nice grilled smoky flavor from the mesquite. You can use any hot sauce or wing sauce you like. I personally like to use Franks Hot Sauce. There is the original and the wing sauce. I prefer the original.
Directions:
First get everything you need together. You will need the following: chicken wings or wing portions, hot sauce, 1 gallon re-sealable bag, fresh ground pepper (optional). Put your wings or wing portions in the re-sealable bag along with the hot sauce. Usually the wings come in a pack of 20. You can use 1 or 2 packs.
Once you put the sauce in the bag of wings you can add a few grinds of fresh ground pepper if you want to. Shake the bag so the wings and sauce can mix well. Let the wings and sauce sit flat in the fridge for a few hours. The longer the better. Make sure you mix the bag up every 30 minutes so that all the wings get a good coat of sauce on them. If you can't wait a few hours to let the hot wings marinade that's okay.
I have marinaded the hot wings for as little as 30 minutes and they still came out good. Start your fire about 30 minutes before you want to start grilling you hot wings. Remember to use your chimney starter to get the fire going. If you don't have mesquite that is fine. Whatever cooking wood you have will do. If all you have is charcoal then that's fine too.
Once your wood is red hot, you can add the hot wings to the grill. Depending how hot your
grill is, I usually grill my wings on there for about 20 minutes covered. I grill 10 minutes on each side. Be careful for flare ups because it is going to happen. When the flare ups happen I just shift my wings to the other side of the grill where there are no coals. I also baste my wings with the excess sauce that is in the bag while the wings are cooking. When the wings are done you are ready to eat!
Grilled Chicken Wings (Hold The Heat Please)
If you like to eat chicken wings but do not like the heat of hot wings then you will like this recipe. The next recipe is the same. The only thing you need to change is the marinade.
Instead of the hot sauce use I will replace it with Allegro marinade. I have used the "Original Marinade" and the "Hickory Smoke Marinade". Both work well. The hickory marinade goes well with the mesquite wood you use to frill believe it or not. There are three more marinades that Allegro offer. They have "Teriyaki Marinade", "Game Tame Marinade", and "Hot & Spicy Marinade". I have been using Allegro now for many years and have never had any complaints.
